Spring Salad with Lime-Chili Marinade

Ingredients:
I Large Lime (zest and juice)
1 1/2 tsp. Chili Paste (sambole)
4 oz. Grape Seed Oil
1/8 tsp. Cardamom (ground)
12 medium Shrimp (peeled and deveined)
Salt and Pepper to taste
Method:
Begin your Father's Day brunch by heating the grape seed oil in a frying pan. While the oil heats up, in a seperate bowl mix together the lime, chili paste and cardamom. Once the oil is hot, add the shrimp and season them in the frying pan with the salt and pepper. Cook the shrimp for 1 minute on one side and then flip them over and add the mixture from the bowl into the frying pan. Complete the shrimp by cooking them for a final 2 minutes. Be sure to serve the shrimp warm with your dad's favourite salad (prepared ahead of time).
Yield: 1/2 cup
Chef's Tip:
Pair the shrimp marinade with your dad's favorite salad.
This recipe also works well with fish.
