Green Salad with a Wild Ginger Vinaigrette
Wild Ginger Dressing
¼ onion chopped
1/3 stalk of celery
1 inch grated wild ginger (If wild is not available use normal ginger)
1/3 cup soya sauce
1/3 cup rice wine vinegar
1 tsp. sesame oil
½ cup extra virgin olive oil
Salt and freshly ground pepper to taste
Method:
Combine all ingredients in a blender and purée until smooth.
Add a little water if needed.
Serve over mixed salad greens, strawberries and crumbled feta cheese.
