Delicious Healthy Soup Recipe
Curried Green Lentil Soup

Ingredients:
1 tbsp grape seed oil
1 medium onion- diced small
1 large carrot - diced small
2 stalks celery - diced small
1/4 tsp ground nutmeg
1 tsp green curry paste
8 1/2 cups vegetable stock
2 cups green lentils
2 tbsp cornstarch
1/4 cup cold water
salt & pepper - to taste
Method:
Heat oil in large saucepan on medium-high heat and add diced vegetables.
Cook for 2 minutes until tender; add nutmeg, curry paste and vegetable stock.
Bring to a boil; add green lentils and bring back to a boil; turn down heat and simmer
for 20 minutes.
In a separate bowl, mix together cornstarch and cold water and add to soup.
Cook to thicken. Add salt and pepper to taste.
Puree soup and strain, if necessary. Garnish and serve.
Yield: Six portions
Chef's Tip: Add chopped bacon or sausage to complement the soup.
