Roasted Garlic, Apple & Maple Syrup Vinaigrette

1 Apple (peeled, cored and sliced)
Pinch Nutmeg
1/8 - tsp Cinnamon
2 tsp Maple syrup
1 Garlic Bulb (whole) roasted
2 oz Maple Syrup Vinegar
2 oz Apple Juice
1 Tbsp Dijon Mustard
¾ - cup Grape seed Oil
¾ - cup Olive Oil
Salt and Pepper to taste
Method:
Mix peeled, cored and sliced apple with nutmeg, cinnamon and sugar. Place on a pie plate and bake in oven for 10 minutes at 375F.
Cut tops off garlic cloves, bake in oven for approximately 20 minutes at 375F.
Put apples into food processor.
Squeeze garlic out of skins and place in with apples.
Pulse and add, maple syrup vinegar, apple juice and mustard. Mix well, scraping down sides and mix again.
Slowly add oils until incorporated, and then add salt and pepper to taste.
Lasts up to l week refrigerated
Yield: ½ liter.
Chef’s Tip:
Try using a pear and honey to replace maple syrup and apple.
