2tbsporganic yogurt (goat yogurt if you can find it)
1tbspapple-cider vinegar
1tbspraw honey or agave
1tbspextra virgin olive oil

Take off the top of the apple and set it aside for final presentation.

Take out whole inside of the apple with a round mold or knife. Keep the outside shape of the apples as the cup for salad.

Take out the core of the apple and cut the rest fine julienne. Mix with shaved fennel and lemon-juice.

Put all ingredients for the dressing in the food processor, and make a booth dressing.

Mix everything together and place into the hollowed apple cup. Garnish this with a sprinkle of walnuts and dried cranberries and add the top of the apple for an impressive presentation.
