Apple Fennel Coleslaw Salad Yogurt Beetroot Dressing a delicious recipe to add to your collection. The Spas in Canada Team loves the nutrition dense recipe.

Apple Fennel Salad

Yields2 Servings

 2 medium sized Grannysmith apples
 1 cup shaved fennel bulb
 1 tbsp fresh lemon juice
Dressing
 small size beetroot (peeled and roughly chopped)
 2 tbsp organic yogurt (goat yogurt if you can find it)
 1 tbsp apple-cider vinegar
 1 tbsp raw honey or agave
 1 tbsp extra virgin olive oil

Take off the top of the apple and set it aside for final presentation.

Take out whole inside of the apple with a round mold or knife. Keep the outside shape of the apples as the cup for salad.

Take out the core of the apple and cut the rest fine julienne. Mix with shaved fennel and lemon-juice.

Put all ingredients for the dressing in the food processor, and make a booth dressing.

Mix everything together and place into the hollowed apple cup. Garnish this with a sprinkle of walnuts and dried cranberries and add the top of the apple for an impressive presentation.
