20 asparagus spears
Assorted lettuce leaves
8 smoked salmon slices
Lemon Yogurt Dressing
1 cup (250 ml) organic low fat yogurt
1 tbsp (15 ml) freshly squeezed lemon juice
1 tsp (5ml) lemon zest
1 tbsp (15 ml) chopped dill
1 tsp (5 ml) ground cumin

Combine yogurt, lemon zest and juice, dill and cumin.

Steam the asparagus until tender but still crisp. Chill.

Wash and arrange lettuce leaves on a serving plate.

Roll up each salmon slice and top with asparagus.

Drizzle dressing over salad and serve.
