Fresh Mixed Berries in Phyllo Cup is as fresh as can be with fresh berries and herbs makes this a favorite with everyone. A delicious spa menu dessert that will become your must have at party time.

Yields4 Servings

 4 sheets Phyllo Pastry
 1 tbsp Grape seed Oil
 250 ml Plain Yogurt
 1 tsp Honey-liquid
 ½ medium size Pink Grapefruit-zest & juice
 2 sprigs Fresh Mint
 Pinch Ground cardamom
 ¼ pt Fresh blueberries
 ¼ pt Fresh raspberries
 ½ pt Fresh strawberries-sliced

Drain yogurt overnight in a strainer lined with cheesecloth.

Preheat oven at 350ºf, place sheets of phyllo pastry onto table, brush half of the pastry sheet with grape seed oil, fold sheet in half cut into three pieces, place three pieces in a muffin tin together bake 6-8 min until golden brown.

Take four small pieces of mint off the sprigs and set aside for garnish, finely chop the rest of the leaves. (“Sprig” of mint, a sprig being a stem of mint with 3 or more mint leaves growing out of it)

Fold these ingredients into the yogurt – cheese, grapefruit juice, lime zest, cardamom, honey and chopped mint. Place the yogurt cheese in the bottom of the phyllo cups, top with the berries and place on top the mint sprig.
