Nutrition Fact: Limes have many health benefits for our skin and overall health. Adding a refreshing lime to food or drink has a cleansing effect on the body and boosts our immunity.

10 oz (300g) frozen spinach, thawed, drained and squeezed dry
⅔ cup (150ml) scallions, chopped
½ package silken tofu
¼ cup (50 ml) lime juice
1 tsp (5 ml) lime zest
1 ½ tsp (7.5 ml) Dijon mustard
1 tsp (5ml) raw sugar
½ tsp Himalayan salt
½ tsp fresh ground pepper

Combine spinach and scallions in food processor and pulse for about 30 seconds until blended.

Add silken tofu, lime juice and zest, Dijon, sugar, salt and pepper to taste .
Process until smooth.
